I love peanut butter and chocolate! LOVE. Ultimate gooey amazingness concoction. Again as a Lackey those reese’s pieces and peanut butter cups that have been lovingly sent to me from California, cannot be eaten and sit forlorn in my draw of ‘things I can no longer consume’ for guest with a lactose enzyme naturally found in their stomachs. GRRRR.
BUT…. I found this recipe online for ‘healthy’ (Ah ha some people believing that if you put oats in cookies they become ‘healthy’ – but smeah) Cookies. I combined it with another recipe so I’ve adapted them to create Lactose/Dairy Free Peanut Butter Chocolate Chunk Cookies.
They taste FANTASTIC, lactose free, and dairy free! And people on set (who have that pesky enzyme) had no idea! They aren’t overly sweet and much nicer for it.
1/2 CUP OF DAIRY FREE BUTTER
1 CUP OF DEMERARA SUGAR
3/4 CUP OF CRUNCHY PEANUT BUTTER (CHECK ITS DAIRY FREE – LOOK FOR WHEY POWDER OF MILK POWDER SOMETIMES USED IN SOME BRANDS AS A THICKENER)
1 LARGE EGG
1 TSP VANILLA EXTRACT
1 CUP PLAIN FLOUR
1 TSP BAKING SODA
1/2 TSP SALT
1 CUP ROLLED OATS
1 CUP CHOCOLATE CHUNKS (USE DARK CHOCOLATE WITH NO MILK CONTAIN OR DAIRY CONTENT)
